Sweet potato, lentil and carrot soup

This soup is comforting, high in fiber and with a good load of beta-carotene and lycopene, which support eye and skin health.

Ingredients:

1 red onion, diced

2-3 garlic cloves, minced

2 carrots, diced

2 sweet potatoes, diced

½ cup red lentils, rinsed

1 can of diced tomatoes

Olive oil (1-2 tbsp), salt and pepper to taste, plus spices – 1 tsp garlic powder, ½ tsp coriander, ¼ turmeric, ½ tbsp smoked paprika)

Fresh herbs of choice to garnish.

Method: In a large pot, sauté the onion in olive oil for 3-4 minutes. Add the garlic and cook until fragrant (a minute or so), then toss in spices and keep it on medium heat for one more minute. Toss in the veggies and lentils, plus canned tomatoes and add water (1.5L). Cook at medium low heat for 20 to 30 minutes, or until all veggies are soft, and lentils are cooked thoroughly. Garnish with fresh herbs and enjoy with a slice of bread, ideally whole grain. Enjoy☺️!
