(Yields 15 cookies, but feel free to play with the size and thus final number of cookies.)
3 bananas, mashed
1 tbsp vanilla extract
1/3 cup almond butter
2/3 cup peanut butter
1tbsp flax seeds, ground and mixed with 3 tbsp of water (set aside for a few minutes)
1/3 cup cocoa (always go for fair-trade, if possible, good karma matters!)
1/3 cup chunks of dark chocolate (same as above, the karma thing)
Toppings (or add-ins): hemp seeds, pecans, walnuts, or pumpkin seeds.
Preheat the oven to 350F. Combine all ingredients, mix well, and use a spoon (or ice cream scoop) to place dough blobs on the parchment-lined cookie sheet. Flatten them with a fork and sprinkle hemp seeds on top, and/or nuts (see photo). Bake for 20-25 minutes and allow to cool on a rack. Dig in and enjoy!
